Domaine des Gravennes is a vineyard certified organic since 2011 , committed to viticulture that respects the land and all living things. We produce organic wines that precisely express the richness of their terroir and the unique character of each vintage.

 

Organic viticulture that respects the terroir

At the heart of our organic viticulture approach, working the land is essential. We exclude all synthetic products in order to preserve soil life, promote biodiversity, and ensure vines in natural balance.

Green manures are well-suited to climate change, maintaining the soil ecosystem and preserving groundwater, strengthening the vine's resistance and the balance of the grapes. Each intervention—bud removal, vine training, topping,— is carried out with precision, according to the needs of each plot.

Through constant observation, we guide the vine towards optimal maturity, enabling us to produce authentic organic wines , true to their origin.

 

90% of the grapes are hand-harvested and rigorously selected.

The grape harvest at Domaine des Gravennes takes place between the end of August and the beginning of October, depending on the ripeness of the grapes and the grape varieties. Each bunch is carefully harvested and undergoes rigorous sorting in the vineyard.

This requirement ensures that only perfectly healthy and ripe grapes are kept, essential for the production of high-quality, concentrated and balanced organic wines .

 

Vinification by plot and controlled extraction

The winemaking process for the red wines is designed to respect the fruit and the terroir as much as possible. Each plot is vinified separately with indigenous yeasts in order to preserve its uniqueness.

Destemming is adjusted according to the ripeness of the grapes, and some cuvées benefit from cold pre-fermentation maceration to reveal their full aromatic finesse. Extractions are carried out gently, notably through manual punch-downs, in order to obtain silky tannins and a beautiful structure.

Fermentation temperatures are controlled at 23-25°C and macerations are precisely prolonged to optimize the extraction of aromas and color, without ever altering the natural balance of the wine.

 

Winemaking: balance and expression of the terroir

The winemaking process is carried out with meticulous care; the majority of our wines remain in stainless steel and concrete tanks to preserve the purity of the fruit. However, 10% of our production is aged in oak barrels, including the estate's flagship wine, Marie Louise.
